First I must share my recipe for this week’s Gluten-Free Holiday Desserts! I’ve been saving this extra-special recipe since last Christmas!
Who says you can’t eat cupcakes at Christmas?
My kids LOVE cupcakes. Last year I stumbled across a Martha Stewart recipe for gingerbread cupcakes and I knew I had to get to work creating a gluten-free, dairy-free, and egg-free version my family could enjoy.
The best part? Now you get to enjoy them too!
Gingerbread Cupcakes
Don’t tell anyone, but this cupcake recipe will happily double as a muffin recipe. Just skip the icing!
1 cup teff flour
1 cup sorghum flour (or brown rice flour)
½ cup arrowroot flour (or tapioca flour)
2 tsp baking soda
2 tsp baking powder
1 ½ tsp ground ginger
1 ½ tsp cinnamon
½ tsp ground cloves
2 tsp ground chia OR 1 tsp xanthan gum
½ tsp sea salt
½ cup coconut oil, liquified
2/3 cup maple syrup or agave
1/3 cup unsulphured molasses
6 tbsp unsweetened applesauce
Heat oven to 350 degrees. Line a cupcake pan with cupcake liners, or grease lightly with coconut oil.
In a medium sized bowl sift flours, baking soda, baking powder, ginger, cinnamon, cloves, ground chia OR xanthan gum and sea salt.
In a large bowl beat oil, syrup, molasses, and applesauce until combined. Stir in sifted flour mixture until well combined.
Fill cupcake liners (full) and bake at 350 degrees for 20-24 minutes, or until a toothpick comes out clean.
We frosted ours with homemade cane sugar frosting. I’m working on a new refined sugar-free frosting recipe but it’s not quite ready for you. Perhaps by February – another sweet month!
Yield: 14-15 cupcakes

my fav. dessert has always been a layered treat we call “barbershop”….lots of pudding and coolwhip…unfortunately it’s not gluten free nor grain free so i need to find a new favorite!

My favorite holiday dessert is my grandmother’s Cranberry bread. Alas, I have yet to recreate it in a gluten-free version. But I will not stop trying!

Oh, my. I am excited to find your blog and others. Just arrived from simplysugarandglutenfree. Having suffered from migraines for about 40 years, I have been gluten-free and sugar free for the last….5-7 years or so. I don’t have a favorite desert anymore because I don’t do deserts…haven’t found any that work for me. I usually have a granny smith apple or blueberries and cream. I would love to see your cookbooks.
Favorite holiday dessert…hmm…I like a lot of desserts! LOL One treat I especially like that we only make this time of year is Oreo bon-bons. They aren’t gluten free though. We’re just beginning to venture into the world of gluten free.
BTW, I just found your blog. I’m looking forward to looking at all of your recipes! As I mentioned in my previous comment, we’re just now beginning to venture into the world of gluten free more. So I am trying to find some yummy gluten free recipes. I’m glad to found your blog!

hmmm, this is difficult but I think my favorite is good old fashioned-type sugar cookies in Christmas shapes with seasonal decorations on top!
How did I miss this! So sorry Maggie. These cupcakes (skip the frosting? no way!) look incredible. I’d have to say my favorite holiday dessert is the (completely gluten, dairy, and sugar FULL) chocolate trifle that my aunt makes. Such a guilty pleasure
my fav holiday treats are Russian Nut Balls. We never called them tea cakes. Made them gf this year for the first time. Too delicate to give away– my daughter and I will eat them all! Thanks for the recipe Without Almond meal or flour. So many things you can’t eat with a nut allergy. Dee

I’m a huge cupcake fan, so I’m loving your gluten-free gingerbread cupcake recipe. Obviously, cupcakes are my favorite holiday dessert. I make a raw vegan ginger cupcake, which I linked to your page. I’ve never linked up like that so I accidentally typed in my screen name rather than the name of the recipe. Oops!

Have been doing the wheat-free—dairy free for about 4 weeks now and it is challenging but doable to say the least. Nowadays there is so much out there and lots of wonderful recipes.

I am wondering if you have thoughts about subbing out applesauce and molasses since we are really restricting sugars here. I suppose I could sub more fat for the applesauce. I’d love your thoughts! And what frosting did you use?

I used the applesauce to replace eggs. Can you guys do eggs? Could you try a veggie puree maybe, for the molasses? Combine it with some water to thin it out a little? I’m just trying to think what I would consider trying if I were doing it myself. Let me know if you try it, I’d love to know how you did it! Oh, maybe a nut butter thinned with water?! We used a cashew cream frosting but it’s sweetened with maple syrup.
