I am excited to share a fabulous cookbook with you – Quick Meals: More Than 100 Great-Tasting Recipes for Good Food Fast was created and photographed by Carol Kicinski (the super woman behind the blog and now the magazine).
Quick Meals is Carol’s second cookbook – her first one is a dessert cookbook – Simply . . . Gluten-free Desserts: 150 Delicious Recipes for Cupcakes, Cookies, Pies, and More Old and New Favorites. A must-have for the gluten-free bakers in your life.
First of all, if you know Carol’s blog Simply Gluten-Free , then you know how incredible her photography is – her recipes are the same. I’m always amazed when I pop over to her blog to check out her latest recipe.
Quick Meals is a great cookbook for anyone on a gluten-free diet. It would even be a great gift for those who are curious about eating gluten-free. Most of the recipes are naturally gluten-free.
Quick Meals is cookbook full of simple, delicious, and quick meals for all occasions. The book is divided into 6 main sections: Quick Mixes, Simple Suppers, Easy Entertaining, Get Up and Go, Pantry Raid, and Slow, Slow, Quick, Quick.
One of my favorite sections is the Easy Entertaining section, Carol’s created great menus for certain occasions (i.e. In-Laws for Dinner, I love that one). Two of our favorite recipes from the cookbook come from the Easy Entertaining section: Roasted Sweet Potato Wedges and Quick Black Beans.
As a vegetarian, I love finding new and simple bean recipes. Quick Black Beans is a perfect recipe for a night when I need a nutritious dinner on the table fast. We like to eat our Quick Black Beans in tortillas with all the fixins (Callum’s favorite), with brown basmati rice and greens, or with quinoa and avocado slices. Recently I made the Roasted Sweet Potato Wedges and served them with the black bean dish. It was super easy and super delish.

- Whole Grain Pancakes (easily made egg-free)
- Pear and Arugula Salad

One of my favorite quick snacks is rice cakes with almond butter and the second is jicamas sliced like carrot sticks and eaten raw. This is so good.
My go-to meal is boneless pork chops cooked on the stove top with rosemary, salt and pepper, with a side of rice and vegetables such as zucchini and carrots. Its quick and easy!

I am looking forward to finding new Gluten free recipes as this is a new lifestyle for me. My current go to meal is a Omelet with veggies (mushrooms, onions, pepper, tomatos, kale, spinach, other misc veggies).

I am always drawn to breakfast food. Really quick: cereal and bananas or toast and almond butter
More Time: Scrambled eggs and sausage or pancakes!
Omelette with Diaya cheese and whatever veggies are available. Apple quarters with peanut butter, or simply an avocado with salt and pepper. Quick and easy and nutritious… mostly!
Veggie Korma is always easy – quick prep even though you leave it to simmer for a few minutes – always just enough time to set the table & sit down and then it’s ready!
My easy go to meal is the tomato soup I canned this fall (gluten free)
My go to meal is any form of meat and salad. It’s simple and easy to fix.
If all else fails eggs are a quick fix in a pinch.
Spinach and kale salad with avocado, sunflower seeds, pepitas, canned salmon, cumin, olive oil, lemon juice, salt and pepper. Yum!
I would LOVE to win this cookbook! I love to read cookbooks like novels and this one looks amazing! My go to meal is a nice fresh salad with whatever I have on hand!

My go-to quick meal is a container of Noosa yogurt and a handful of almonds or an apple!
My favorite go-to quick meal is: a steaming hot bowl of quinoa flakes with pumpkin seeds, blueberries and chia seeds. YUM!

My quick meal is black bean nachos, I keep on hand sliced olives, jalapeños, canned beans, & I always have fresh scallions, cheese, tomatoes, salsa on hand. Thank you for this lovely giveaway!
My go-to gluten free meal is anything with prawns – they cook in a flash so I usually do prawns and steamed broccoli or a quick thai coconut curry for my gluten-free, dairy-free and egg free family. Quick, nutritious and delicious meals are not an easy endeavor these days and I’d love some help!
My quick go to meals are veggie and meat stir fry or spagetti with gluten free noodles.
Our family’s favourite GF meal is chili with lots of vegetables and different kinds of beans – the treat? Tortilla chips to dip!

My favorite go to meal is to put together a quick salad with any vegetables I have on hand and then just toss on some protein, whether it’s beans, tempeh, salmon, or chicken! An easy chickpea miso dressing is simple, quick, easy, and delicious to dress it up!

This week my go to quick meal has been sliced cucumbers with the large package of water packed tuna. Quick and easy for on the go!
Quinoa & Garbanzo beans with pesto
Soft scrambled farmers market eggs or Diestel’s delicious carageenan-free roast turkey wrapped in romaine leaves with homemade mayonnaise and fresh jalapeno. Another favorite is black eyed peas, cooked with onions, garlic, herbs, jalapeno and tomatoes…as I finish cooking them, I throw in chopped chard or kale, cover and steam til done. If want more protein, I add a soft boiled egg on top at the table.
My go to meal is Chobani yogurt and granola!
Chicken tacos
My go to quick meal is Greek Tacos. My whole family enjoys them, gluten free or not! Filled with spinach, olives, tomatoes, feta, garlic and greek seasoning, they’re a wonderful quick go to dinner I can count on.

‘Mexican’ layer bowls…rice, refried beans, salsa, cheese, avocado and lime squeezed on top! Eaten with either a fork or blue corn chips if we are all really lucky

I love a tuna with chopped up tomatoes, onions, cilantro, jalapeno, avocado and some lime juice. It is my to go meal!

My favorite quick meal is zucchini noodles with a quick tomato basil pasta sauce.
My go-to quick meal is quinoa…always. It’s saved my life since becoming GF…but I’ve gotta say I really haven’t branched out too much since and that was quite a few months ago so a recipe book would be lovely!
Stir-fried chicken, broccoli,mushrooms and garlic on a big green salad or on a “homemade in three minutes” gf flax seed wrap. Yum! The babes love it too!
I just found out I am gluten intolerant, so I am struggling with quick meals. I have found a tasty snack, though–apple slices dipped in almond butter.
I LOVE food! And am working on using more written recipes while cooking with my 7 and 1.5 year old girls-this looks like a winner! Favorite quick meal… ground beef, left over squash or a can of pumpkin. Add whatever herbs you have on hand. I always use sea salt and sage for sure. Very versatile… can even be soup.
Veggie Omelet (1 egg + 1/2 cup egg white) with warm avocado inside, served with steamed broccoli drizzled with olive oil, Himalayan salt, and fresh garlic. Yummm! For dessert roasted dandelion tea with almond milk!

One egg omelette mixed with cheese and instant dry milk. Lots of protein.
