Certainly you’re reading GOOP?
I’m on Team Gwyneth and always will be. I want to be her friend, have play dates for Callum and Apple, and dinner dates with Chris (Pete and Gwyneth can come too). I know she can be, in the words of Lainey Gossip, nauseating. But I like that about her okay!
I’ve been getting GOOP – G’s newsletter – since day one, thanks to Lainey who told us all about it before it launched. I love it. Though there are many issues that I skip (sorry, not going to do Tracey Anderson’s back-breaking leg lifts). Sometimes GOOP makes me wish I would win the lottery so I could go to all of the places she rubs in our faces, I mean, shares with us. And other times GOOP gives me great recipes (hello Babycakes) that I can use the next day.
Recently GOOP was all about making healthier school lunches – she is also on Jamie Oliver’s team! One of the recipes was for an onion dip that I really wanted to try – I love my dips and so do my babes!
I decided to give it a try using cashew cream and it turned out great. Cashew cream is easy to make with Callum because he can basically do it all!

Caramelized Onion Dip
3 tbsp extra virgin olive oil
1 small yellow onion, halved and thinly sliced
1/4 tsp sea salt
freshly ground black pepper
1/2 tsp paprika
2 tsp finely minced chives or garlic scapes
Heat the olive oil over medium heat in a pan. Add the onions and cook for 4 or 5 minutes to soften. Turn the heat to low and cook for 20-25 minutes or until they have caramelized (browned in colour). Remove from the heat and mix together with the remaining ingredients.
I served mine with veggies, rice crackers, and on falafels. The flavour is amazing. If you want to serve this to your babes, consider removing some of the onions so you don’t scare them away!
