Have you ever eaten at FRESH in Toronto????
I stumbled upon FRESH a few years ago when I was in Toronto for a field trip. Yummy yummy yummy and healthy food. They sell these AMAZING caramel pecan squares. Basically caramel, chocolate and pecans. How can you go wrong? The best part is that they are vegan (and obviously gluten-free). Pete and I are slightly addicted to them. So my mission of late is to try to recreate these heavenly treats. My first attempt was okay. Nothing like the original but delish none the less.
My cousin and his girlie brought me a couple of bars this weekend – I find it easier to work on them if I have specimens from which to study (and subsequently devour). Do you remember an episode of Friends when Monica did this?? I do but the details are vague. So I’m going to try again. I’ll keep you posted and I’ll definitely post my recipe. Here’s the ingredients for interest’s sake:
pecans, dark chocolate (dairy free), brown rice syrup, vegan margarine, evaporated cane juice, soy milk.
Sounds simple non? It’s the caramel bit that is tricky. It’s got to be just right! Pete and I had a little too much wine last night so we really need something yummy to help get us through the day. It’s hard to parent the day after a fun night!!!
UPDATE! We went to FRESH yesterday (November 23rd, 2009) and they are no longer selling these 🙁 It seems FRESH wants to sell desserts that are exclusive. And now you can buy these babies all over the GTA (luckily Noah’s Health Foods was right next door and they had some left). FRESH replaced them with a gluten-free caramel almond shortbread. Oh my goodness. Heavenly. The recipe testing begins this week. Stay tuned.
